This is a gorgeous Spring/Summer recipe that I use to make in a kitchen I used to run. It is light and refreshing and you can use any fish that you want.
Blue Eye poached in Tom Yum with an Asian salad
4 x 250g Blue Eye Fillet
500mls coconut milk
½ cucumber
3tbs tom yum paste
2 red chillis
40mls oil
2 sprigs of spring onion
1 brown onion
½ bunch coriander
½ bunch chives
