Roasting meats

How good are rare roast beef sandwiches with seeded mustard mayonnaise, tomato and gherkins? Or rare roast beef with coleslaw and cheese on fresh bread? But how do you get the gorgeous pinky rare roast beef everytime?

I want to show you what we do with our beef to get it to gorgeous medium rare.
