Strawberries are just screaming out summer and during the week with all this gorgeous food going into our bellies I don't think one more little dessert is going to hurt is it? Fruit Cake

So when it came to making my brothers' wedding cake in 2009, I made mums fruit cake with a few adjustments. So when it came to Christmas at Windsor Deli, I made the fruit cake with all my adjustments and came up with this gorgeous cake.

300g apricots

300g currants
300g sultanas
300g mixed peel
½ cup brandy or sherry
1 green apple, grated
150g honey
240g brown sugar
4 eggs
250g plain flour
